Spumone
(Serves 10 to 12)
Spumone is a molded Italian ice cream dessert usually containing chopped fruits and nuts.
The word spumone derives from the Italian "spuma" or foam. It has a lighter texture than plain ice cream because whipped cream is mixed into one of the layers. Spumone is often made with 3 different flavors of ice cream resulting in a multi-colored confection; our recipe is made with only vanilla ice cream.
Spumone
Ingredients:
1 cup heavy cream
1/3 cup sugar
1/2 cup fresh pitted cherries or maraschino cherries, diced
3 tablespoons candied orange peel
1 teaspoon lemon juice
6 cups vanilla ice cream, slightly softened
1/2 cup chopped pistachios or almonds
1/4 teaspoon almond extract
Directions:
Whip cream with sugar until stiff peaks form.
Fold in cherries, orange peel, and lemon juice.
Refrigerate for 30 minutes.
Combine the ice cream with the pistachios and almond extract.
Line a 1-1/2 quart loaf pan or mold with plastic wrap extending over the sides of the pan. Press half of the ice cream in an even layer in the bottom of the pan.
Spread an even layer of the whipped cream mixture over the ice cream.
Spread the remaining ice cream on top in a smooth layer.
Fold the plastic wrap over the top of the pan.
Freeze for at least 8 hours or overnight.
Unmold onto a serving platter; remove the plastic wrap.
Cut into slices to serve.
