Cornish Hen with Sausage-Rice Stuffing
Until after World War II, chicken was not widely eaten in Italy.  Poultry was expensive and a live chicken could produce eggs for a family farm to eat or sell.  Many of today's Italian recipes for chicken were once made with wild birds or rabbit.  Chicken is a very common dish in the US, with boneless chicken breasts becoming more popular in recent years.  Many of the chicken dishes that we consider to be traditionally Italian are really Italian-American.
