Plum Crisp
Ingredients:
Filling:
2 pounds plums, about 8 medium-size plums
1 tablespoon cornstarch
1/4 cup brown sugar
1/2 cup water
1 tablespoon lemon juice
Topping:
3/4 cup all-purpose flour
3/4 cup light brown sugar
3/4 cup old-fashioned oatmeal
3/4 cup sliced almonds
3/4 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup cold unsalted butter, cut into 1/2-inch cubes
Directions:
To make the filling:
Halve and pit the plums. Cut them into 1-inch wedges.
In a medium saucepan, combine the cornstarch, brown sugar and water.
Add the plums to the saucepan and place over medium heat.
Cook for about 3 minutes, stirring, until the mixture starts to thicken.
Remove from the heat, stir in the lemon juice. Transfer the filling to an 8 x 11-inch baking dish.
To make the topping:
Preheat the oven to 375 degrees F.
In a large bowl, combine the flour, brown sugar, oatmeal and almonds.
Add the cinnamon and salt. Use a pastry blender to cut the butter into the mixture until it resembles coffeecake crumbs. You may have to use your hands to combine all of the ingredients well. Evenly spread the topping mixture over the plums in the baking dish. Bake for 40 to 45 minutes, or until the topping is golden brown and crisp. Cool on a rack.
The crisp may be served warm with ice cream or whipped cream for dessert or cold with a dollop of yogurt for breakfast.
