Low Carb Pizza Chaffles

(Serves 2 - two chaffles each)
Pizza chaffles are a quick and easy way to get mini low-carb pizzas with your own favorite toppings.
Chaffles are waffles that are made with cheese and eggs with a small amount of low-carb flour added. These pizza chaffles also have some seasonings added to give the 'crust' more Italian flavor.
Try adding slices of pepperoni, some cooked sausage or vegetables before baking the pizzas.
Ingredients:

Special Equipment:
Mini Waffle Maker

Chaffle Crust:
2 large eggs
2 teaspoons coconut flour
1 cup shredded mozzarella cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/4 teaspoon garlic powder

Toppings:
1/4 cup marinara sauce
1 cup shredded mozzarella cheese
Your choice of other toppings

Directions:

Preheat a mini waffle maker according to manufacturer's instructions.
Preheat the oven to 400 F.  Line a small baking sheet with parchment paper.

In a small bowl, whisk together the crust ingredients until well combined.
Grease the preheated waffle maker with cooking spray. Pour 1/4 of the batter into the center. Close the lid and cook the chaffle until lightly golden brown, about 2 minutes. Repeat with the remaining batter to make 3 more chaffles.

Place the chaffles on the prepared baking sheet.
Spread 1 tablespoon of the marinara sauce on each chaffle, then top with 1/4 cup of the mozzarella. Add any other toppings that you prefer. Bake about 5 minutes, or until the cheese melts to your liking. 
Chaffle pizzas are best served fresh. You can make them ahead by wrapping them in foil and refrigerating for 2-3 days.  To reheat, place them on a small baking sheet in a preheated 350 F. oven for 5 to 6 minutes.
In the photo, we added strips of prosciutto and some arugula dressed with lemon juice and olive oil after the pizzas were baked.
