Brie Phyllo Cups

(Makes 15)
Store-bought flaky golden phyllo dough shells nestle creamy, tasty Brie cheese.
Crispy on the outside and rich and gooey on the inside, these flavorful bites are topped with a dollop of fruit preserves and optional chopped nuts.  These easy appetizers come together in under 10 minutes so they are a perfect last-minute appetizer especially during the busy holiday season.  You can find the phyllo cups in the freezer section of your supermarket.
Ingredients:
1 (8 ounce) wedge Brie cheese, rind removed, cut into 1-inch cubes
15 frozen phyllo tart cups
1/2 cup raspberry, apricot or your favorite flavor preserves
3 tablespoons chopped pistachios or walnuts (optional)

Directions:
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.

Arrange phyllo cups on the baking sheet. Place one piece Brie cheese in each phyllo cup.   Top with 1/2 teaspoon raspberry (or your favorite flavor preserves).  Bake until Brie is melted, about 7 minutes.

Sprinkle a few chopped nuts over each (optional). Allow to cool for a few minutes and serve.
