Christmas Punch for Kids
Here are a few recipes for cocktails and punch to add to your holiday entertaining.

White Christmas
(Serves 1)

1 ounce Amaretto
1 ounce heavy cream
1 ounce vodka
Grated nutmeg (optional)

Mix all ingredients with ice in a shaker.
Strain into a chilled cocktail glass.
Optional: Garnish with nutmeg


Death by Chocolate
(Serves 2)

2 scoops chocolate ice cream
1 ounce chocolate syrup
1 ounce coffee liqueur
1 ounce crème de cacao
1 ounce vodka

Combine all ingredients in a blender.
Divide between 2 glasses.
Make it even more decadent:
Top it off with whipped cream, cocoa powder and a candy cane.


Cranberry Mojitos
(Serves 6)

1 cup fresh mint
1/2 cup sugar
2 cups light rum
1-1/4 cups fresh lime juice
1 cup thawed frozen cranberry juice concentrate
20 ounces club soda
6 cups ice

Use a wooden spoon to mash the mint with the sugar in the bottom of a large pitcher.  Add the rum and lime juice.  Stir to dissolve the sugar
Add the cranberry concentrate, club soda, and ice.  Stir well and serve.


Poinsettia
(Serves 1)

2 to 3 ounces cranberry juice
1 ounce triple sec
4 to 5 ounces Prosecco or sparkling wine

The juice and the wine should be well chilled.
Combine all the ingredients in a wine glass and serve.

To serve as a punch:
2 cups cranberry juice
5 ounces triple sec
1 bottle Prosecco or sparkling wine


Apricot Eggnog
(Serves 8)

2 cups apricot nectar
1 cup heavy cream
1/4 cup sugar
3 eggs, room temperature, separated *
8 tablespoons rum
8 cinnamon sticks

In a bowl, blend nectar, cream, sugar, and egg yolks in a bowl until smooth.
In another bowl, beat egg whites with an electric mixer until stiff peaks form.
Fold the egg whites into the nectar mixture.  Refrigerate eggnog until chilled
Divide eggnog among 8 glasses.  Pour 1 tablespoon rum into each glass.
Garnish with a cinnamon stick.

*This recipe contains uncooked eggs and should not be consumed
by those with health concerns.


Light Eggnog
(Serves 6)

4 cups reduced-fat (2%) milk
1 cup egg substitute, such as Egg Beaters
2 ounces brandy
3 tablespoons sugar
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

With an electric mixture, beat together all of the ingredients until foamy, about 5 minutes.  Cover and refrigerate until well chilled.  Serve cold.


Cranberry Kiss
(Makes 1 serving)

6 ounces cranberry juice cocktail
1 ounce orange juice
Club soda
Orange wedge for garnish

Pour cranberry juice cocktail and orange juice into a glass with ice.
Top with club soda. Garnish with an orange wedge.


Pomegranate Cosmopolitans
(Serves 6)

16 ounces (2 cups) vodka
8 ounces (1 cup) orange liqueur
8 ounces (1 cup) pomegranate juice
4 ounces (1/2 cup) lime juice

Pour all the ingredients in a pitcher and refrigerate until ready to serve.
Pour into martini glasses and serve.


Appletini Martini
(Serves 1)

You can substitute apple juice or cider for the schnapps  but it won't be a traditional appletini.

2 ounces vodka
1 ounce Apple Pucker Schnapps
Crushed ice
Optional: Apple slices

Combine vodka and schnapps in a cocktail shaker with crushed ice.
Shake well. Strain into a chilled cocktail glass and garnish with apple slices.

Caramel Appletini:
Add 1 ounce butterscotch schnapps to the above recipe.


Pumpkin Pie-tini
(Serves 1)

1 ounce milk
2 tablespoons pumpkin puree
1-1/2 ounces vanilla vodka
1-1/2 ounces creme de cacao
Crushed ice

Optional:
Small amount of honey thinned with water
Graham cracker crumbs

Combine all ingredients in a cocktail shaker.  Shake well to combine.
Strain into martin glasses.

Optional:
Before pouring the cocktail into the martini glasses.
dip the rim of the glass in the thinned honey and then into the crumbs.


Chocolate Punch
(Serves 12)

4 ounces semisweet chocolate, coarsely chopped
1/2 cup sugar
2 cups hot water
4 cups milk
1 1/2 teaspoons vanilla extract
1 quart vanilla ice cream
4 cups club soda
Bailey's Irish Cream (optional)

In a large saucepan combine the chocolate and sugar with the hot water.
Bring to a boil, stirring until the sugar dissolves, and chocolate is smooth.
Add milk and vanilla extract, heat through, 1 to 2 minutes. 
Remove from heat and let cool down to room temperature.
Put in the fridge until thoroughly chilled.
When you are ready to serve, scoop ice cream into a punch bowl.
Pour the chocolate mix over top.  Add club soda right before serving.

Optional:  Add some Bailey's Irish to the punch


Christmas Punch for Kids

1 half gallon raspberry or orange sherbet
1 large can pineapple juice
3 litres 7-UP or ginger ale

Place sherbet in punch bowl.
Mix pineapple juice with 1 litre of soda and pour over top.
Add the rest of the soda and stir slightly.
As the sherbet melts, it forms a sweet, tasty drink.
