Gluten-Free Chocolate Cupcakes
with Chocolate Butttercream Frosting

(Makes 12 cupcakes)
Ingredients:

2-1/2 cups almond flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 cup sour cream or plain Greek yogurt
1 teaspoon vanilla extract

Directions:

Preheat the oven to 350⁰ F.  Line a 12-count cupcake pan with cupcake liners.

In a large bowl, combine the almond flour, cocoa powder, sugar, baking soda and salt. Stir to combine the ingredients well.

In another bowl, whisk together the eggs, yogurt and vanilla until well combined.

Add the liquid ingredients to the flour mixture and stir well until the batter is smooth and the dry ingredients are well blended into the batter.

Divide the batter evenly into the lined cupcake pan.  Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.  The cupcakes will have some cracks on top but they will be covered with the icing.

Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before adding the icing.


Chocolate Buttercream Frosting

(Enough for 12 cupcakes)

Ingredients:
4 ounces unsalted butter, room temperature
1-1/2 cups confectioners' sugar
1/4 cup unsweetened cocoa powder
Pinch of salt
1 teaspoon vanilla extract
2-4 tablespoons heavy cream

Directions:

Beat the butter with an electric mixer until light and fluffy, 2-3 minutes.
Add the sugar, cocoa , salt and vanilla; beat on low to combine then increase speed to medium to combine until smooth.  Add the heavy cream, one tablespoon at a time, until the desired consistency is reached.

Use immediately or cover and store in the refrigerator for up to 1 week,
