Vegetable oil for frying Confectioners' sugar for dusting
Combine all of the ingredients, except the oil and confectioners' sugar in a bowl. Stir to blend the ingredients into a batter.
Heat oil in a deep fryer to 350 degrees F. Use a 1-1/2 inch scoop or two spoons to drop balls of dough into the oil. Only fry 6 to 7 zeppole at a time so that the temperature of the oil does not reduce too much. Fry them until they are golden brown all around, about 5-6 minutes per batch. Transfer the browned zeppole to a paper-towel lined plate. Serve warm dusted with confectioners' sugar.
