Luxardo Maraschio Cherries
1 pound cherries, stems removed and pitted
1/2 cup granulated sugar
1/2 vanilla bean, scraped
1 cinnamon stick
Pinch of freshly grated nutmeg
Juice of 1 lemon
1/2 cup water
1 cup Luxardo Maraschino liqueur
In a medium saucepan, combine the sugar and seeds from the vanilla bean.
Stir to blend the seeds into the sugar.
Add the cinnamon stick, nutmeg, lemon juice, and water.
Place the saucepan over medium heat and bring the mixture to a simmer.
Cover and simmer for 5 minutes. Add the cherries and bring to a simmer again.
Cook the cherries at a simmer for about 5 minutes, until they are slightly softened. Remove from the heat and stir in the Luxardo liqueur.
Allow the cherries to cool completely.
Transfer the cherries and their liquid to clean jars, cover, and refrigerate for 2 weeks.
